People Lover Cookies
    

1 egg   /   1 cup of sugar   /   1½ cups of butter
1 tsp. vanilla   /   1 tsp. baking powder   /   4 cups flour

   
Cream egg, sugar, butter and vanilla.  Dump one cup of flour into the bowl (with beaters stopped) and into that mix the baking powder.  Then mix in rest of flour, mostly by hand.  Roll out and cut into desired shapes.  Bake at 400 degrees for 8-10 minutes.  (Very easy!)

      

   

Sauce Cake
     
2 cups flour   /   1½ cups sugar   /   4 tsp. baking powder

½ tsp. salt   /   2 tsp. vanilla   /   1 cup milk
4 tbsp. (1/4 cup) melted margarine
   

Mix all ingredients together.  Pour batter into 9 x 13" pan. Mix up one of the following sauces and carefully pour over batter. (...so it doesn't splatter all over; the sauce liquid will start out sitting on top of the cake batter...

BUTTERSCOTCH:
1½ cup brown sugar
3 cups hot water
4 Tbsp. (1/4 cup) melted margarine

ORANGE:

1 cup sugar
1/4 tsp salt
3 cups orange juice
1/4 t. lemon rind
(opt'l)

CHOCOLATE:

1½ brown sugar
1/3 cup chocolate Quik
3 cups hot water
   

...and end up, after baking at 350 degrees for 35-40 minutes, with a thick sauce on the bottom with the cake floating on top of it!  Wait 20 to 30 minutes before serving. (From the kitchen of Barb Shelton; Originally from my Mom)

     

   

Burrito Casserole

   

Meat mixture:

1½ to 2 lbs. hamburger—fry and crumble with…

1 med. onion, chopped

     

Add and then simmer:

1 envelope Taco Seasoning

1 can bean dip

1 jar taco sauce (mild)

   

Roll mixture up in large flour tortillas (10 large.) Cover with cheese sauce and bake until hot and bubbly. (Glass baking dish works best.)

    

    

Cheese sauce:

1 jar hot taco sauce

Grated cheese (enough to make sauce thick)

1/3 cup catsup

2/3 cup water

   

Mix all the above together and heat.  You may want to add sliced black olives, fresh, chopped tomatoes and/or cheese to the top. Bake at 350 degrees or until heated through — about 30 minutes.

   

   

Taco Soup

     

  

1 48-oz. can V-8 juice    /    1 can olives, sliced and undrained

1 large and 1 small can of chili or kidney beans

1 pkg. taco seasoning     /    1 15-oz. can corn (undrained)

1 lb. hamburger, browned     /    ¾ c. acini di pepe

½ onion, chopped -OR- onion powder  -OR-  minced onion to taste

    

Brown hamburger with taco seasonings and onion. Add undrained beans, corn and olives and V-8 juice. Bring to a boil, stirring often. Then add the acini di pepe and turn to low. Cook another 30 min. Stir often to keep the acini from sticking to the bottom.  Serves 8 to 10.

    

You can have dishes of chips, grated cheese, sour cream, etc. for topping. You can also cook it longer before adding the acini so the flavor blends better, using a lower heat, and have less sticking.

   

   

Creamy Chocolate Frosting

     

2 oz. unsweetened chocolate, grated

1 cup sugar    /    3 tbsp. cornstarch    /    1 tbsp. butter

1 tsp. vanilla    /    1/8 tsp. salt

    

Combine chocolate, sugar, and cornstarch in a heavy-bottomed pan. Stir in 1 cup boiling water and cook, stirring constantly, until thick and smooth. Remove from heat and add the butter, vanilla, and salt. Beat well. You will have enough to fill and frost an 8 or 9-inch two-layer cake.  (From my sister, Pat Harrold)

      

      

White Bread-Machine Bread

  

 

1 cup plus 2 tbsp. water

1 tbsp. margarine or butter, softened

3 cups flour   /   2 tbsp. sugar

1 tbsp. dry milk (I use powdered creamer)

1 scant tbsp. active dry yeast

   

Place all ingredients in bread bowl in the order given above. (If you will be "delay starting," take particular care to not allow any water to touch the yeast as this will prematurely activate the yeast.)  Carefully insert bread pan into bread machine, close lid, and plug machine in.  Select "WHITE"; then the crust color you want; then "LARGE"; then rapid or not if your machine has that option.  If delay-starting, press the hour and minute for the time you want the bread to finish.  Then press START!

   

   

 

Broccoli Bacon Salad

  

1/2 pound bacon ( cut up & cooked of course)

1/2 cup sunflower seeds    |    1/2 cup currents

1/4 cup red onion, chopped

broccoli florettes in small bits

(I usually use 3-4 bunches).

 

Dressing:  Combine 1 cup mayo with

1 tablespoon vinegar and 1 tablespoon sugar
